Homemade Bruschetta

Not sure what to do with all those leftover tomatoes from your summer garden? Or have a bunch of tomatoes that are about to go bad and have no idea what to do with them? This Homemade Bruschetta is the perfect solution!

It is fresh, tasty, filling, and a great snack or appetizer for a get-together! This has been a family favorite every year and we never go a summer without it. It never disappoints and will leave you with a smile on your face :)

Time needed:

  • 15-20 minutes


Ingredients

  • 6-8 medium/large tomatoes

  • 1 tbsp minced garlic

  • 1 tbsp fresh basil, chopped

  • 1/2 tbsp balsamic vinegar

  • About 1/4 cup grated parmesan

  • Salt and pepper to taste

  • 1 baguette, sliced into small pieces and toasted

  • About 5-8 people


Let’s get cookin’!

  1. Slice and toast the bread! First off, you will want to take a baguette or other loaf of bread and slice it into small pieces for people to be able to grab. A thin baguette is my favorite to use because the slices will be the perfect size! Toss them into a toaster to crisp them up.

  2. Chop up the tomatoes! This is definitely the longest part of the recipe, but after this, it is super easy. Grab and sharp knife and chop up all of the tomatoes you plan on using into small pieces. At this point, you can also chop up your fresh basil. You can also use dried basil, but keep in mind that the flavor may not be as distinct or fresh. Optional: you can also freshly grate your parmesan, but pre-grated is just fine (and usually what I use)!

  3. Mix it up! Now, you can mix up all of your ingredients. Throw your chopped tomatoes and basil, minced garlic, balsamic vinegar, grated parmesan, and salt and pepper into a bowl and give it a quick mix. Don’t forget about your toasted bread, too!

  4. Taste and enjoy! Give your bruschetta a taste and adjust as needed. Place it into a serving bowl, if desired, and serve with a spoon and your crispy bread on the side. Enjoy!
