Chicken Meatballs
Want an easy chicken dinner that isn’t just a grilled chicken breast? While there’s nothing wrong with chicken breast, I know it can become redundant. These chicken meatballs are a great may to mix up your dinners!
I’m not gonna lie… it’s hard to take a good picture of meatballs! Although they seem simple, they can be used in SO many dishes. They can be used in spaghetti, in a soup, in any kind of creamy sauce to top off noodles or rice, or can be eaten just as they are! You can also add in a variety of herbs and spices to change the flavor profile and customize it to the dish that you are making. Let your imagination wander!

Time needed:
Prep: 10 minutes
Cooking: 20 minutes
Ingredients
2 lbs ground chicken
1/3 cup breadcrumbs
1 egg
2 tsp salt
2 tsp pepper
1 tbsp all purpose seasoning (21 Salute Seasoning from Trader Joe’s is my fave)
1 tsp oregano
1 tsp smoked paprika
2 tbsp cooking oil

Throw it all in a bowl! This is the amazing part about this recipe… All you need to do to prep before cooking is throw all of the ingredients into a bowl EXCEPT for the cooking oil and mix! This includes your ground chicken, breadcrumbs, egg, and seasonings. Your ground chicken will start to bind as you mix and this will allow you to roll them into meatballs later!
Oil and heat your pan. Don’t forget to get your pan ready! Grab a large pan, add your oil, and let it warm up.
Form the meatballs! Once you have everything mixed cohesively, you can start forming the meatballs! You can either form them all and place them on a plate before adding them all to the pan, or you can add the meatballs as you make them, one by one. Either way works! I usually shape them into meatballs that are a bit bigger than a golf ball.
Note: If you find that your meatballs are not forming into a ball and are falling apart when you put them down, try adding another 1/8 to 1/4 cup of breadcrumbs. This should help with binding! You can also add another egg if you are using more meat, but 1 egg should be enough for 2 lbs of chicken.
Time to cook! Once your pan is hot, place your meatballs in and let them brown up on all sides. I have found that the best way to make sure they are fully cooked is to place them on one side, cover the pan with a lid to create some steam, and repeat on all sides. If you find that the meatballs are sticking to the pan, you can add more oil!
Enjoy! This is where you get creative. You can have them on their own, or add them into a sauce and let them simmer, or drop them into a soup. They can be used in so many ways! Whatever you do, I hope you enjoy! :)
