Simple Mediterranean Salad
Want a super simple salad that is light but will fill you up quick? This is the one for you! This Simple Mediterranean Salad is one of my go-to’s if I need something super quick as a side to my lunch, or as a filling mid-day snack!
With only 4 ingredients, it doesn’t get easier than this. If you are vegetarian, this is an amazing way to get in some protein as well! You can also add more vegetables if you would like; I’m sure it would taste great!
Time needed:
5-10 minutes
Ingredients
1 medium tomato, diced
1 cup cucumber, diced
Pinch of goat or feta cheese
1 tbsp hummus

Let’s get cookin’!
Chop it up! Our first step is to chop our tomato and cucumber into small pieces. I like them in about 1/4 inch pieces because I prefer my vegetables cut small, but feel free to chop them as you please! This is where you are chop up and add any other vegetables if you would like, but it is delicious as is.
Add your toppings. This is the easy part! Simple crumble on your cheese and add a dollop of your favorite hummus.
Mix up and enjoy! I like to mix the hummus into the salad so I get a nice even distribution of flavor. After that, you are done! I hope this leaves you with a smile on your face and a full stomach :)
