Oven Baked Potato Wedges
Potatoes are one of my FAVORITE sides to any dinner. To me, they just taste like home. They are savory, warm, and pair well with so many different seasonings. Out of all the ways you can prepare potatoes, this is a go-to for me!
These Oven Baked Potato Wedges require minimal prep, fill the house with an amazing smell, and come out the perfect mix between soft on the inside and crunchy on the outside. If you want a side that you can prep and throw in the oven, this is the one for you! They also pair well with a side of sour cream. Yum!

Bake time: 30-40 minutes
Ingredients
12 round petite potatoes, unpealed (or 2 baking potatoes)
2 tbsp olive oil
1/2 tsp salt
1 tsp pepper
1 tsp oregano
1 tsp paprika
1 tsp all-purpose seasoning (or your favorite seasoning blend!)
Any other seasonings your heart desires (cayenne pepper for heat, Italian seasoning for a fresh taste, etc)

Preheat the oven. This is your friendly reminder to preheat your oven before it slips your mind! Set your oven to 425° F.
Slice the potatoes! For this recipe, I used round petite potatoes because I find them easiest to use. All you need to do is cut them into quarters and dump them into a large bowl. If you are using larger potatoes like baking or russet, you may need to slice them a few more times to get your desired thickness. Keep in mind, the thicker the wedges, the longer it will take to bake!
Seasonings. After all of the potatoes are sliced and placed into a large bowl, drizzle olive oil over them (just enough to coat them!) This will help with the baking process, keep them crisp, and allow the seasonings to stick better. Give the potatoes a good mix to coat them in oil and then add in your seasonings! Mix again until covered.
Lay onto a pan. Grab yourself a baking pan and a sheet of parchment paper to place on top. Then, go ahead and dump your seasoned potatoes onto the pan! Spread them out until they are laying flat on the pan and are not overlapping.
Time to bake! Once your oven is preheated, it is time to put them in the oven! Let your potatoes bake for about 20 minutes, and then pull them out for a mix. If you are making a small amount, you can flip each potato wedge individually to allow for another side of the potato to crisp up (since the side that is touching the pan will cook faster). But, if you are making 5-6 servings like I usually do, do not worry about each one being flipped perfectly! I usually take them out, give them a good shake and a stir around the pan to flip most of them over, and put them back in. They will still taste great!
