Open-face Tomato Sandwich
We all have those days when the last thing we want to do is cook and we are simply not in the mood to eat anything. This is a very normal feeling! I feel like this from time to time, and it is super frustrating that you should be eating something to keep yourself going, but you just don’t have the time and/or energy. This is why it is so important to have a few go-to, 5 minute recipes that are easy to make but also keep you satisfied. This recipe is one of them!
I make this Open-face Tomato Sandwich whenever I am in that kinda mood, or really in any mood because it tastes SO good! Not every meal has to be super elaborate; trust me, most of mine are not! Take this recipe and put it in your back pocket whenever you need something quick and simple. And remember, you deserve to eat, even if your body is fighting you on that!

Ingredients
2 slices of bread
Cream cheese (measure with your heart!)
1 medium tomato
Salt and pepper
Oregano
Honey, regular or spicy (optional)

Let’s get cookin’!
Toast your bread. Feel free to use whatever bread makes you happy! My favorite has been this multigrain bread from Trader Joe’s, but sometimes I am craving a good, fluffy white bread. Whatever it is, toast it up to your preferred toasty-ness!
Slice that tomato! While your bread is toasting, slice your tomato into thicker slices. I like to place 2 slices on each slice of bread, but it all depends on the size of your tomato. You may have some extra tomato, which you can feel free to snack on while you wait on your bread :)
Cream cheese! After the bread is toasted, you will spread as much cream cheese as your heart desires onto your bread! This might seem like a strange combo with the tomato, but trust me, it works perfectly.
Assemble. Once you have spread on your cream cheese, you will add the rest of your ingredients! First, add your sliced tomatoes. Then, sprinkle on a dash of salt, pepper, and oregano. I also love to drizzle on some hot honey, but that is optional! Plain honey is also just as good on this sandwich. Another great addition if you’re up for it is some green onion!
