Butternut Squash Casserole

I created this recipe last year and have been waiting all year to make it again. It is warm, delicious, and the perfect combination of sweet and savory. It is guaranteed to impress and bring people coming back for more! Give it a try!

Prep time: 20 minutes
Cook time: 45 minutes
Ingredients
1 butternut squash, cut into bite-sized pieces
6 pieces of bacon, cooked and chopped
1 cup spinach, chopped
1/2 tbsp salt
1/4 tbsp pepper
1/2 tbsp all purpose seasoning (like Vegeta or 21 seasoning)
1 tsp smoked paprika
2 tbsp breadcrumbs
2 tbsp grated parmesan

Preheat oven to 420° F.
Peal and chop your squash. This is the most time consuming part of the recipe, but everything after this is a breeze! First, peel the butternut squash and cup off each end. Then, you will cut the squash in half long-ways (from end to end) and scoop out the seeds with a spoon. Lastly, chop up the squash into bite-sized cubes and place into a baking dish. I have also used pre-cut butternut squash, but keep in mind it may take an extra 5-10 minutes to cook.
Toppings and seasonings! Next, cook your bacon as desired. You can either microwave, pan-fry, bake, or whatever you prefer! Once they are crisp, chop into small pieces along with the spinach and add to the baking dish. Add all of the seasonings (omit breadcrumbs and parmesan for now) and mix together until well combined.
Into the oven! Now that all of the ingredients are mixed together in the baking dish other than the breadcrumbs and parmesan, bake covered with tinfoil for about 40 minutes, or until fork-tender. Once you can fairly easily insert a fork into the squash, uncover and sprinkle on the breadcrumbs and parmesan evenly. No need to mix! Cook for an additional 5 minutes uncovered.
