Loaded Broccoli Salad
Salad should not be bland and boring! They can be so much more than just some spinach and grilled chicken, although there is nothing wrong with this combo once in a while. But, if you are looking for something to spice up your salad game… this is it!
Throw together this easy broccoli salad as part of lunch, dinner, or bring to a get-together and watch it disappear!

Ingredients
Salad
About 4 cups broccoli, chopped
1/4 cup red onion, chopped
3 slices of bacon
7-10 walnuts
2 tbsp pumpkin seeds
Dressing
1/3 cup mayonnaise
1 tbsp olive oil
1/2 tbsp red wine vinegar
1 tsp salt
1 tsp pepper

Cook your bacon. Whether you prefer to bake, pan-fry, or microwave your bacon, start cooking them up now!
Make the dressing. Add your mayonnaise, oil, vinegar, and seasonings to a bowl large enough to fit all of your broccoli. Mix the dressing ingredients together until combined.
Chop up the broccoli, onion, and bacon! Grab your broccoli florets and chop the stalk off of the florets. Cut the stalks into small, bite-sized pieces. Repeat with the heads of the broccoli and add to the bowl with your dressing. Chop up about 1/3 of a red onion and your bacon into small pieces and add to the same bowl.
Add walnuts and pumpkin seeds. If you are using whole walnuts, you may want to use a knife to chop them into smaller pieces, or use your hands and sprinkle them into the bowl along with the pumpkin seeds.
Mix and enjoy! Mix the salad well until the dressing is fully incorporated into the salad. Give it a try to see if you need more seasonings, serve up, and enjoy!
