Strawberry Spinach Salad

This Strawberry Spinach Salad is just as simple to make as it looks, and is bursting with flavor! You have tartness of the spinach, sweetness from the strawberries, earthiness from the goat cheese, and crunch from the walnuts. Such an easy way to get in fruits, vegetables, and healthy fats all in one go!

If you are looking for an easy summer salad for meal prepping, a side to dinner, or even to bring to a get-together, this is the one for you. It takes less than 10 minutes to make and will be a crowd favorite. The key to this salad is the dressing, but I’m sure that any strawberry dressing or simple vinaigrette will do!

Time needed:

  • Wash time: 5 minutes

  • Prep time: 5-10 minutes


Ingredients

  • 2 cups spinach

  • ½ cup strawberries, chopped

  • 1 tbsp goat cheese (or however much your heart desires)

  • 10 walnuts, chopped

  • 1-2 tbsp Brianna's Home Style Blush White Vinaigrette Dressing (or your vinaigrette of choice)

Let’s get cookin’!

  1. Wash your produce! This is a step that many skip over, but only takes a couple of minutes and ensures that you are not consuming any unwanted dirt, pesticides, or even insects. Just rinse them in cold water, or let them soak in water and a splash of vinegar for a few minutes.

  2. Let’s start chopping! Sometimes when I am making a simple serving for myself, I will chop the spinach into small pieces to make it easier to eat. But, for aesthetic purposes and ease, you can leave them whole for larger portions. For the strawberries, I like to cut them into ½ inch sized pieces! Lastly, if you are using whole walnuts, I recommend chopping them into quarters to get them in every bite.

  3. Time to assemble. Take a large enough bowl and throw in your spinach, strawberries, goat cheese (feta also works great), and walnuts. Then, drizzle on some of your chosen dressing and toss your salad together! The dressing I use is fairly sweet, so you do not need much.

  4. Enjoy! Whether you are cooking for 1 or for 10, this salad is sure to bring smiles and empty plates :)
